Ferrero Rocher cake – healthy version

FERRERO ROCHE CAKE – HEALTHY VERSION

One of my favourite cheat desserts is also Ferrero Rocher. As I’ve already made Ferrero Rocher balls, I needed to make Ferrero Rocher cake. What does that mean? Chocolate, chocolate, chocolate. Delicious chocolate layer combined with thick and delicious chocolate cream. Definately a dessert that I will make again really soon. So, lets make this Ferrero Rocher cake together.

PREPARATION TIME:

20minut (+ peka)

NUTRITION VALUE

210 calories (10 pieces) ; 10.2g proteins, 15g fats, 9.3g carbs

 

INGREDIENTS FOR A CHOCOLATE CAKE

  • 4 eggs
  • 40g spelt flour
  • 40 almond flour (you can only use spelt flour)
  • 1 tbsp of sweetener of your choice (I use Sugar Sweet 1:10 : Stevia + Erytrol)
  • 20g unsweetened cacao
  • 1,5 tsp baking powder
  • 100g ground hazelnuts
  • 50g low fat Greek yoghurt
  • 1 tbsp of rum
  • 10 drops of chocolate essence

 

PREPARATION OF A CHOCOLATE CAKE

  1. Put egg whites in a separate bowl and mix them into snow with an electric mixer.
  2. Put egg jolks and sweetener in another bowl and mix until creamy texture – add rum and joghurt and mix again.
  3. Now slowly start adding flour and mixing with a spoon (dough will be quite dry).
  4. Now add egg whites and mix again.
  5. Pour the dough into a round baking tray covered with baking paper (mine is 20cm size).
  6. Bake 30-40 minutes on 180 Celsius.
  7. When the dough is cooled down, cut off the top (to get straight surface) and cut it on half.

 

INGREDIENTS FOR A CHOCOLATE CREAM

  • 2 egg jolks
  • 300ml milk of your choice
  • 1 tbsp of sweetener of your choice (I use Sugar Sweet 1:10 : Stevia + Erytrol)
  • 10 drops of chocolate essence
  • 20g unsweetened cacao
  • 20g cornstarch

 

PREPARATION OF CHOCOLATE CREAM

  1. Mix all the ingredients and than cook the mixture for a few minutes on a medium heat (about 5-10 minutes) to thicken up.
  2. When chocolate cream is cooled down add:
  • *20g ground almonds  (optional)
  • *20g hazelnuts cut to pieces  (optional)
  • 250g low fat mascarpone cheese
  1. Mix all the ingredients and tast the cream. If it’s not sweet enough add some more sweetener, honey or chocolate essence. Put 1/3 of the cream on the side, in other part of the cream mix the top of the dough cut to small pieces (the part of the dough you cut off before)
  2. Wet bottom layer of the cake with some milk, than put 2/3 of the cream on it.
  3. Cover with the rest of the dough and cover it with the rest of the cream.
  4. Decorate with hazelnuts and put it in a fridge for a few hours.
